Yield: about 50 sandwich cookies
Cookie:
2 Devil's Food Cake mixes (Duncan Hines works particularly well)
1 1/2 cups shortening
4 eggs
Mix well and roll into small balls (about 1 inch in diameter). Bake on ungreased cookie sheet at 350 degrees for 7-9 minutes. Press two cookies together with filling {recipe below}.
*Note: This cookie dough is extremely thick. If you have a standing mixer it will be easier to mix as opposed to using a hand mixer or mixing by hand.
Filling:
1 package cream cheese (8 oz.)
1/4 cup butter
2 3/4 cups powdered sugar
1 T vanilla
Mix until smooth
